SANCERRE Grand Vin 2021
Grape variety: 100% Sauvignon Blanc
Soil: Caillottes (Calaire Blanc)
Pruning: GUYOT
VINIFICATION
Short pre-fermentation cold maceration followed by light (low pressure) pressing. Vinification regulated by temperature control with regular aeration. Aged on fine lees for 6 months with daily tasting and resuspension of the lees. Bottled in spring 2022.
TASTING
Appearance: Pale gold in colour with a trace of green.
Nose: The nose is open and fresh with intense mineral notes.
Palate: An ample and deep palate with an underlying fresh and vibrant mineral tension. The finish is supple and mouth-watering.
FOOD PAIRING
This dry, fruity, mineral wine is perfect as an aperitif and is a splendid accompaniment to seafood and shellfish such as oysters, clams, lobster or langoustine. It is wonderful with fish, whether poached in sauce or grilled. To round off a meal, this wine is the perfect partner for the local “crottin de Chavignol” goat's cheese, and hard cheeses
such as aged Comté, Salers or Cantal.
ANTOINE DE LA FARGE: Antoine's grandfather, Gerard Clément, was one of the most respected winemakers in the region and a founder of the 'Menetou-Salon' appellation. He is still present on the family domain and for Antoine he was and still is a great inspiration. He started his career in a wine shop and later became a top buyer for one of France's largest wine merchants. Here he was given the opportunity to expand his knowledge enormously and gain international experience (ex. in Australia).
After 12 years in wine retail, he returned to the domain in 2012 to put all that experience into practice. As a winemaker, Antoine feels every wine must be a natural reflection of its soil, requiring sustainable agriculture. To achieve this, Antoine does not manipulate the wine. That is why all grapes are picked by hand, only gravity is used and no yeasts are added to initiate the fermentation. His wines therefore constantly win prizes!
