In Sancerre, Philippe Auchère is a wine-grower in the town of Bué.
This 2021 SANCERRE wine is from Philippe’s very best 60 year-old vines. It’s got a light platinum color that flashes a touch of green when it’s poured. The nose has so much complexity; the nose yields lemon zest, chalk dust, and white flowers. There’s even a little hint of ginger and sea spray. On the palate, you’ll enjoy lime and grapefruit, with a minty, tangy freshness. The finish is complex; minerality and crushed stones come to mind on your palate, with a zesty, tangy, smooth finish. Pair it with goat cheese from nearby Chavignon village, or a roast chicken and sautéed vegetables!
Philippe takes a responsible and natural approach to wine-growing: the vineyards are maintained carefully with the aim of protecting the structure of the soil and promoting biodiversity. Hoeing and mowing are the two methods he has chosen for the maintenance of his vineyards. Microtractors, which are lighter and more energy-efficient than straddle tractors, are occasionally used to limit soil compaction, but also to reduce the CO2 footprint.
